Sanitation

Sanitation often refers to a station or an area in which the collection and sanitation of unclean inventory or equipment occurs. Sanitation may be on-premises or off-premises. It is deliberately located out of the view of the guest.

The Sanitation Captain

A sanitation captain is a captain who is responsible for managing sanitation, including sanitation staff, setup and breakdown, equipment, coffee service preparation, and refuse removal.

The Key Responsibilities of a Sanitation Captain

1. Pre-Event Preparation and Setup

Review safety protocols

  • Review relevant documentation and equipment inventory

    • BEO

    • ROS

    • Rental List

    • Staff List

    • Floor Plan

  • Conduct a sanitation pre-event walkthrough

  • Review, organize, and verify equipment and inventory

  • Conduct a sanitation staff meeting

  • Administer setup for different service types

    • Coffee service

    • Conference service or Buffet Service

    • Cocktail service and/or Passed hors d'oeuvres service

    • Plated service or American service

2.Event Execution

  • Manage Primary Event Components: Prepare for guests, respond to beverage service, respond to food service, manage refuse, and monitor staff performance

3. Post-Event Breakdown

  • Structure Safety Precautions

  • Administer Breakdown

  • Debrief with the Sanitation Staff

4.Post-Event Analysis

  • Evaluate an Event

  • Identify Patterns
