Pre-Event Preparation and Setup

Pre-event preparation refers to the stage prior to an event in which service professionals, and particularly the captain, prepare for the event.

  1. Review Safety Protocols
    Review all of the details related to safety independently and (if necessary) with other captains and the client.

  2. Review Documentation
    Review all details of event documentation (e.g., BEO, ROS) independently and (if necessary) with other captains.

  3. Conduct a Sanitation Pre-Event Walkthrough
    Schedule the walkthrough with enough time before the event to address any issues. Conduct a walkthrough with documentation to determine sanitation station location and to clarify refuse separation and removal protocols. Take notes and update any necessary event documentation.

  4. Review, Organize, and Verify Equipment and Inventory
    Review, organize, and verify equipment to ensure the presence, function, and condition of rented equipment and house equipment.

  5. Conduct a Sanitation Staff Meeting
    Gather the sanitation staff (if applicable). Conduct a team meeting.

  6. Administer Setup
    Administer the sanitation station(s) setup for different service types (coffee, conference or buffet, cocktail and/or passed hors d'oeuvres, plated or American, and hybrid).
