Conduct a Bar Staff Meeting

Pre-event preparation and setup involve conducting a bar staff meeting. The bar captain should conduct this meeting, following the protocols defined in the Captain Fundamentals course (CAPT 1000).

However, the bar captain also has some additional considerations to address when conducting the bar staff meeting. Some of these are logistical while others are related to the guest experience.

  • The anticipated setup, usage, and breakdown requirements of specialty equipment

  • The schedule for setting up both built-in and temporary bars

  • The relation between setup time, beverage temperature, and the integrity of the ice

  • Anticipated guest count vs. available inventory

  • Tracking systems during event execution for available inventory (e.g., counting bottle caps)

  • The proper rotation of chilled products using the FIFO method (”first in, first out,” which means older inventory is pulled before newer inventory)

  • Expectations for the preparation and presentation of garnishes and/or specialty cocktails

  • The proper way to pace service

  • The proper way to monitor beverage consumption

  • The proper management of visibly intoxicated patrons (VIPs)
